I love it when things just randomly turn out for the best! Don’t you!? That is totally what happened with the recipe for this delicious little Chocolate & Sea Salt Mini Loaf!

Here’s what happened:

I was perusing around Instagram and stumbled across the Rx Bar insta page and was very intrigued by these simple, healthy, protein bars! Unfortunately, I have never seen these bars in Canada, let alone my hometown and I really wanted to try one! So, being the DIYer that I am, I thought I might be able to recreate the bars in my kitch!

As I started mixing and mashing ingredients together I ended up with a much thinner bar mixture than I had hoped I would get. It was actually like a batter. So, I improvised and poured the batter into a mini loaf pan!

I turned on the oven, crossed my fingers, and said a little prayer in hopes that the batter would rise and I’d get a nice, dense, delicious chocolate “bread” that I could top with sea salt!

20-minutes later, total and utter shock. IT WORKED! To be totally honest, I’ve never been much of a baker (which is why you don’t see a ton of baked goods on the blog). When I do bake I’m often peering into the oven with one eye open whispering “pretty please, pretty please, pretty please work, work, work” , and luckily, this time was a serious win.

I was also super impressed when I calculated the nutritional information for this recipe! There is 26g of protein as well as 11g of awesome dietary fibre in the loaf! Considering how rich, dense, and delicious it is, I’d say those numbers are a big nutritional win!

Who says chocolaty baked goods can’t balance blood sugars and give you a boost of protein!?  They need to give this recipe a whirl!

The loaf was so delicious, moist, chocolaty, fudgy, and seriously easy to whip up! Topped with that extra pinch of sea salt and a smear of Earth Balance spread  it was the pièce de résistance!

So, I encourage you, my lovely readers who shy away from baking because you are just like me, anticipating the disaster that could be, give this Chocolate & Sea Salt Mini Loaf a go!!

Serves: 1-2
Ingredients
  • ½ cup egg whites (4 whites)
  • 4 large pitted dates
  • ⅓ cup raw almonds
  • 1 heaping tablespoon coconut flour
  • 3 squares (15g or ½ oz) of Endangered Species Dark Chocolate with Sea Salt & Almonds(alternatively you could use 3 squares of 70% dark chocolate + ⅛ tsp sea salt)
Instructions
  1. Preheat the oven to 325 degrees.
  2. Blend the ingredients together in a blender until smooth.
  3. Generously grease 2 mini loaf pans with coconut oil.
  4. Pour in the batter.
  5. Place the loaf pans in the centre of the oven and bake for 20-25 minutes or until a toothpick pulls clean in each loaf.
  6. Sprinkle each loaf with a pinch of sea salt. Let cool completely before slicing and serving.
