Bumbleberry Paleo Protein Pancakes

Serves: 2
  1. In a medium sized mixing bowl add in the eggs, applesauce, almond milk, and vanilla extract and whisk to combine.
  2. In another bowl combine the coconut flour, almond flour, tapioca flour, collagen peptides, baking powder, baking soda, and salt and mix to combine.
  3. Add the dry ingredients to the wet ingredients and stir until smooth.
  4. Heat a non-stick pan or griddle over medium heat and grease with coconut oil.
  5. Pour ¼ cup portions of the batter onto the pan and drop 3-4 berries and 1-2 sliced strawberries onto the wet batter, then cook each pancake for 2 minutes, or until slightly bubbling, then flip, cooking for another 1-2 minutes on the berry side.
  6. Repeat to make about 8 pancakes.
  7. Stack pancakes (4 per serving) and top with the nut butter, maple syrup, and berries.
  8. Enjoy!
