Chickpea Fennel Vegetable Salad

Ingredients
  • ½ cup canned chickpeas, drained and rinsed
  • 1 roma or vine tomato, diced
  • ½ cup diced cucumber
  • ½ cup chopped cauliflower
  • ½ cup diced red pepper
  • 2 tablespoons diced red onion
  • ½ cup chopped fennel
  • 1 tablespoon chopped fennel sprigs
  • 1 tablespoon chopped fresh dill
  • 2 tablespoons of your favourite herb vinaigrette
Instructions
  1. Chop and dice all of the vegetables and herbs, combine in a large bowl and add in the dressing
  2. Mix well to combine.
  3. Add to a large mason jar.
  4. Before eating, shake the jar to disperse the dressing if it has settled at the bottom of the jar.
