Chickpea Fennel Vegetable Salad
- ½ cup canned chickpeas, drained and rinsed
- 1 roma or vine tomato, diced
- ½ cup diced cucumber
- ½ cup chopped cauliflower
- ½ cup diced red pepper
- 2 tablespoons diced red onion
- ½ cup chopped fennel
- 1 tablespoon chopped fennel sprigs
- 1 tablespoon chopped fresh dill
- 2 tablespoons of your favourite herb vinaigrette
- Chop and dice all of the vegetables and herbs, combine in a large bowl and add in the dressing
- Mix well to combine.
- Add to a large mason jar.
- Before eating, shake the jar to disperse the dressing if it has settled at the bottom of the jar.
