Beautifying Mango Avocado & Walnut Salad

  • 1 large ripe mango, peeled and diced
  • 1 ripe avocado, pitted and diced
  • 6 cups mixed lettuce greens
  • ¼ cup chopped walnuts
  • 1 tablespoon hemp seeds
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons avocado oil or olive oil
  • 2 tablespoons pure honey
  • dash of salt and pepper
  1. To make the dressing, whisk together or blend the avocado oil or olive oil, lemon juice, honey, and salt and pepper.
  2. In a large bowl add the lettuce, diced mango, diced avocado, crushed walnuts, and hemp seeds.
  3. Drizzle with the dressing and toss everything to combine.
  4. Divide between two plates.
  5. Optional: Top with grilled chicken breast or baked salmon and goat cheese or dairy free feta cheese!
  6. Enjoy!
For a vegan salad use agave nectar in the place of honey.
