Watermelon & Feta Salad

Serves: 2
  • 2 cups watermelon, cut into small chunks
  • 1 cup cherry tomatoes, halved
  • ¼ cup of fresh basil, cut into ribbons
  • 2 ounces feta cheese, crumbled
  • ¼ cup red onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon honey
  • salt and pepper, to taste
  1. Cut watermelon and tomatoes, slice the onion, and chop the basil.
  2. In a small bowl whisk together olive oil, vinegar, lemon juice, honey, salt and pepper.
  3. Combine watermelon, tomato, red onion, and basil in a large bowl, and toss with dressing to coat.
  4. Crumble feta over top and mix together.
  5. Enjoy!
This recipe tastes even more amazing the next day when the flavors have had time to develop! Keep it in the fridge overnight and serve the next day to wow all your guests! :)
