'Mighty' Muffins : Inspired by a Wonderful NITK Fan!
  
       - ¾ cup unsweetened almond milk
  - ¾ tsp apple cider vinegar
  - ½ cup pure pumpkin puree
  - ⅓ cup raw honey
  - 2 tablespoons apple butter (OR unsweetened applesauce)
  - 2 eggs
  - ¾ cup ground flaxseed
  - ⅓ cup oat bran
  - ⅓ cup spelt flour
  - 1½ tablespoons ground cinnamon
  - 1½ teaspoons ground ginger
  - ½ teaspoon ground nutmeg
  - ½ teaspoon ground cloves
  - ¾ teaspoon baking powder
  - ½ teaspoon baking soda
  - ¼ cup sultana raisins (optional, but nice for added sweetness)
  
      - Preheat oven to 400 degrees.
  - In a small bowl combine almond milk and vinegar to make a 'sour' milk.
  - Add in pumpkin, honey, eggs, and apple butter, and whisk together.
  - Stir in flaxseed and oat bran and stir.
  - Let sit for 5 minutes
  - Add in spelt flour, baking powder, baking soda, and spices and mix to combine.
  - Lastly, toss in raisins (and any other additions like nuts, seeds, other dried fruit), and fold into batter.
  - Scoop batter evenly into 12 muffin tins.
  - Bake for 12-15 minutes or until toothpick pulls clean.
  - Allow muffins to cool for an hour or so.
  - Enjoy!
  
     These muffins are delicious but not overly sweet - if you prefer a sweeter muffin add in more honey! :)
