'Mighty' Muffins : Inspired by a Wonderful NITK Fan!

Ingredients
  • ¾ cup unsweetened almond milk
  • ¾ tsp apple cider vinegar
  • ½ cup pure pumpkin puree
  • ⅓ cup raw honey
  • 2 tablespoons apple butter (OR unsweetened applesauce)
  • 2 eggs
  • ¾ cup ground flaxseed
  • ⅓ cup oat bran
  • ⅓ cup spelt flour
  • 1½ tablespoons ground cinnamon
  • 1½ teaspoons ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ cup sultana raisins (optional, but nice for added sweetness)
Instructions
  1. Preheat oven to 400 degrees.
  2. In a small bowl combine almond milk and vinegar to make a 'sour' milk.
  3. Add in pumpkin, honey, eggs, and apple butter, and whisk together.
  4. Stir in flaxseed and oat bran and stir.
  5. Let sit for 5 minutes
  6. Add in spelt flour, baking powder, baking soda, and spices and mix to combine.
  7. Lastly, toss in raisins (and any other additions like nuts, seeds, other dried fruit), and fold into batter.
  8. Scoop batter evenly into 12 muffin tins.
  9. Bake for 12-15 minutes or until toothpick pulls clean.
  10. Allow muffins to cool for an hour or so.
  11. Enjoy!
Notes
These muffins are delicious but not overly sweet - if you prefer a sweeter muffin add in more honey! :)
