Vegan Chocolate "Truffles" & a Baby Shower!

Prep time
Total time

Serves: 30
Ingredients
  • 1 cup pitted dates
  • 1 cup almonds
  • 1 cup rolled oats (gluten free if needed)
  • 1 cup chocolate hemp protein powder (I use North Coast Naturals) - optional
  • 3 tablespoons raw cocoa powder + 1 tablespoon raw cocoa powder
  • 2-3 tablespoons unsweetened almond milk
Instructions
  1. In a food processor combine the almonds, oats, protein powder (if using), and 3 tablespoons of the cocoa powder.
  2. Process for 30 seconds.
  3. Add in the dates, and process for 1-2 minutes, slowly pouring the almond milk into the top opening.
  4. The mixture will begin to clump together.
  5. Using a tablespoon measure, scoop out the mixture and with wet hands, roll into a ball and place on a baking sheet covered in parchment.
  6. Do this with all the batter. You should make around 30 balls.
  7. Sprinkle the remaining 1 tablespoon cocoa powder on the baking sheet and roll the balls around in the cocoa powder to lightly coat - you may want to use more cocoa powder or less, it's up to you!
  8. Place the balls in the freezer for 1 hour to firm up.
  9. Enjoy!
