Sweet Apple, Chicken & Coconut Saute

Serves: 4
  • 400g skinless, boneless chicken breast, diced
  • 400g skinless, boneless chicken thighs, diced
  • 1 medium gala apple, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups kale, chopped
  • ½ tablespoon pure maple syrup
  • 1-1 tablespoons water
  • 2 tablespoons unsweetened shredded coconut
  • ½ teaspoon garlic powder (or 1 clove garlic, minced)
  • ½ teaspoon onion powder
  • salt and pepper
  1. Heat a large non-stick pan over medium heat and add in diced chicken thighs and breast.
  2. Add in the apple and the spices.
  3. Cook for 5-7 minutes and add in cherry tomatoes, kale, maple syrup and coconut.
  4. Add one to two tablespoons of water simmer the ingredients and wilt the kale.
  5. Continue to sauté for another 5-7 minutes until chicken is completely cooked through and browned.
  6. Serve with your choice of carbohydrate if preferred like quinoa, brown or wild rice, sweet potatoes, rice pasta, etc.
