Turkey & Ricotta Meatballs

Serves: 4
Ingredients
  • 1 pound extra-lean ground turkey
  • ½ cup part-skim ricotta cheese
  • ¼ cup oat bran (or GF binder)
  • 1 egg
  • ¼ cup fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon Italian seasoning
  • salt and pepper
Instructions
  1. Preheat oven to 375 degrees.
  2. In a bowl combine all ingredients, use clean hands to mix together.
  3. Divide the mixture into 20 meatballs.
  4. Heat a non-stick skillet to medium-high heat and coat lightly with cooking spray. Brown the meatballs for a few minutes on each side only enough to brown the edges not to cook the meatballs fully. You may have to do this in batches.
  5. Place the browned meatballs on a lightly greased baking pan and bake in the oven for 15 minutes or until done.
