Sweet & Savoury Fennel Chickpea Turkey Ragout

Ingredients
  • 500g ground turkey
  • 1 can chickpeas, drained and rinsed
  • ½ tablespoon olive oil
  • 1½ cups organic chicken or vegetable broth
  • 1 8oz can tomato paste
  • 1 zucchini, diced
  • 1 fennel bulb, diced, sprigs chopped (reserve some sprigs for garnish)
  • 10 cherry tomatoes, halved
  • 1 cup mushrooms, sliced
  • ½ small red onion, finely diced
  • 2 cloves garlic, crushed or minced
  • 1 tablespoon raw honey
  • 2 teaspoons grated fresh ginger or 1 tsp ground ginger
  • ½ tsp cinnamon
  • ½ tsp ground coriander
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
Instructions
  1. Heat a large saucepan over medium-high heat, add in olive oil and garlic and onion,
  2. Saute for 2-3 minutes.
  3. Add in ground turkey and spices and cook for 5-6 minutes, breaking into small pieces as it cooks.
  4. Add in the zucchini, fennel, mushrooms, and tomatoes and sauté for another 3-4 minutes.
  5. Reduce heat to low, and in a bowl whisk together tomato paste, honey and broth then add to the pan.
  6. Add in the chickpeas and stir until everything is well combined.
  7. Allow ragout to simmer at low heat for 10 more minutes, then serve with a garnish of fennel sprigs.
