Quick & Easy Stir Fry Veggies (GF/DF)

Serves: 3-4
Ingredients
  • 1 cup broccoli florets
  • 2 bell peppers, sliced
  • 2 zucchini, diced
  • 1 cup other veggie of choice (cauliflower, carrots, mushrooms, etc.)
  • Stir Fry Sauce:
  • 2 tablespoons olive oil
  • juice of 1 large lime
  • 1 tablespoon raw honey
  • ¼ cup coconut aminos (or GF soy sauce)
  • 1 clove garlic, crushed
  • 1 tsp tapioca starch
  • 1 tsp grated ginger (optional)
  • 2 tablespoons sesame seeds (toasted or not)
Instructions
  1. In a small bowl whisk together the dressing ingredients and make sure the tapioca starch is completely dissolved.
  2. Heat a wok or large pan over medium-high heat.
  3. Add in the sauce and allow it to bubble slightly and thicken, stirring constantly.
  4. Add in the veggies and toss with the sauce to coat.
  5. Reduce the heat to medium and continue to stir and toss until veggies are tender-crisp, about 5 minutes.
  6. Remove from heat and sprinkle with sesame seeds.
  7. Enjoy!
