I naturally tend to be more active in the Summer. I love to bike, hike, paddle-board, go to outdoor fitness classes and pretty much soak up all the activity that I can. Luckily, so does Hemsley and she makes a pretty good exercise companion. I think our chariot stroller is her favourite place to chill and take in the scenery!

Over the last month we’ve been going regularly to our favourite “mom & me” fitness class and as a result I’ve also been paying extra close attention to my pre and post-workout nutrition. While I love my go-to post-workout smoothies, I’ve been craving something new, so I’ve spent the past month perfecting these delicious post-workout Bumbleberry Paleo Protein Pancakes!

These pancakes are fluffy, filling, slightly sweet, loaded with juicy fresh berries (’tis the season!) and they have a sneaky addition of collagen protein powder which is paleo-friendly and perfect for post-workout muscle repair and recovery.

I used a mix of coconut, almond, and tapioca flour to help create the fluffy texture for these protein pancakes and keep them naturally gluten free. Along with the mix of flours and protein powder, I added in eggs for an extra boost of protein, unsweetened almond milk, and applesauce for some natural sweetness.

Pancakes aren’t pancakes without the toppings, am I right?! For my delicious bumbleberry paleo protein pancakes I used natural peanut butter, fresh strawberries, blueberries, and blackberries, and a generous drizzle of pure maple syrup.

The best part of all, thanks to iHerb I was able to order many of these ingredients conveniently online. Having a toddler can be a little intense at times so convenience when it comes to grocery shopping is key. These days it’s not uncommon to find me doing much of my grocery, household, and miscellaneous shopping right at my computer.

Now because we are on-the-go a lot during the summers and because I love exercising outdoors, it’s also great to have convenient to-go post-workout snacks that I can pack along.

It is best to eat within one hour after your workout (within 30 minutes is ideal), as the longer you take to replenish after exercise, the longer it takes your body to recover. Research has shown that consuming protein and carbohydrates within 15-minutes post-exercise can nearly double the insulin response in the body, which results in more stored glycogen, a.k.a. better recovery!

Below are my favourite to-go post-workout options for when you don’t have the chance to get home for to make delicious paleo protein pancakes:

Protein Bars: Like a granola bar, protein bars are always so easy to pack along and eat post-workout. Make your own healthy homemade protein bars (check my recipes page!) or go with natural pre-packed bars that contain minimal ingredients and no additives like my favourite Chocolate Sea Salt RX Bars which only have natural, whole food ingredients.

Fruit + Nut Butter: This post-workout snack takes virtually no time to prepare and has a nice mix of fast-digesting carbohydrates from the fruit, and plant protein from the nut butter. I love Justin’s convenient single portion peanut butter packets providing the perfect amount for a banana!

Hard Boiled Eggs + Fruit: Another simple, easy to pack along snack is two hard boiled eggs and a fruit of choice such as a banana, apple, pear, or container of berries. The two together provide fast-digesting carbohydrates, protein, and a bit of fat!

Protein Shake: Nothing is easier than shaking protein powder with water, unsweetened nut milk, or natural juice after a workout. Not only are you getting fast-digesting usable protein for muscle repair and recovery, you are also rehydrating. Organic Jerky + Veggies: Beef or turkey jerky is packed with protein, easy to pack along, and makes a tasty post-workout snack paired with raw veggies. I always recommend going with a natural, organic jerky that contains no nitrates such as Epic Bar’s chicken or beef bites.

Ingredients
Instructions
  1. In a medium sized mixing bowl add in the eggs, applesauce, almond milk, and vanilla extract and whisk to combine.
  2. In another bowl combine the coconut flour, almond flour, tapioca flour, collagen peptides, baking powder, baking soda, and salt and mix to combine.
  3. Add the dry ingredients to the wet ingredients and stir until smooth.
  4. Heat a non-stick pan or griddle over medium heat and grease with coconut oil.
  5. Pour ¼ cup portions of the batter onto the pan and drop 3-4 berries and 1-2 sliced strawberries onto the wet batter, then cook each pancake for 2 minutes, or until slightly bubbling, then flip, cooking for another 1-2 minutes on the berry side.
  6. Repeat to make about 8 pancakes.
  7. Stack pancakes (4 per serving) and top with the nut butter, maple syrup, and berries.
  8. Enjoy!
