How To Make Celery Juice in the Vitamix (or blender!)

 

It’s time for another addition of ‘How To’, the making of a simple staple recipe in a super easy way. Last time I made 2-Minute Homemade Peanut Butter in the Vitamix and today I’m showing you how to easily make a delicious and refreshing Vitamix Celery Juice. Celery juice has been trending for quite some time now and is touted to have health benefits, but it’s not a miracle juice like some would like to believe, ha! It is definitely good for you but simply another way to enjoy vegetables rather than on the plate. 

I like celery juice with the addition of a few other ingredients like apple, lemon, and honey which is the version I’m sharing today. It’s awesome that you don’t actually need an expensive juicer to make this wonderful bevy, just like any other homemade fruit or veggie juice which can be made in the blender!

Is Celery Juice Healthy?

 

The short answer, yes, of course! Celery juice contains an array of vitamins including vitamin A, vitamin C, vitamin K, and minerals like  calcium, potassium, and magnesium, as well as electrolytes and water which is obviously going to hydrate you nicely. That being said, it’s not a miracle juice and it serves as another way to enjoy the benefits of vegetables but in juice form. I went through a stint of drinking quite a bit of my own homemade celery juice for a while and I did genuinely feel more energized and noticed an improvement in my digestion, but like I said, it’s not a miracle juice! 

One thing to note about juices is that the fibre is essentially removed from the vegetable or fruit so there is a lack there, but I think it was the overall hydration effect that boosted my digestive system, and because I add lemon to the celery juice which helps boost digestive enzyme production. 

Over at Healthline, Erin Palinski (R.D.) says:

There’s nothing wrong with drinking celery juice if you enjoy it. However, the nutritional properties of the juice are not unique and the same benefits can be found from eating celery along with other leafy green vegetables. If you enjoy the trend, feel free to stick with it. But otherwise, just aim to add more greens in any form to your plate.

Steps to Making Blender/Vitamix Celery Juice:

 

Making your own homemade celery juice without a juicer is actually so incredibly easy. All you need is your celery (and any other vegetables or fruits you may want to add in), water, a Vitamix or other high-speed blender, and a nut milk bag or mesh bag. Here are the super simple steps!

  1. Add washed celery and water to the blender. 
  2. Blend on high for 1 minute or so until absolutely no chunks remain. 
  3. Line a bowl or pitcher with a nut milk bag or mesh bag*
  4. Pour celery juice through the bag into the container.
  5. Squeeze any remaining liquid o:ut of the nut milk/mesh bag until only the pulp remains
  6. Chill the juice or enjoy immediately and discard of the remaining pulp.

*You can find nut milk or mesh bags online on amazon or at most health food stores. 

Ingredients for Blender/Vitamix Celery Juice:

 

To make simple celery juice all you need is celery and water! For my tastier version, that has a touch of natural sweetness along with some citrus flavour, has a few more easy ingredients you likely already have in your fridge! For these produce ingredients I recommend choosing organic. Here’s what you’ll need:

  • Celery
  • Green apple
  • Lemon
  • Raw honey (optional*)
  • Water

*I like adding a touch of raw honey to the mix to cut the tartness of the celery and lemon and add a little bit of natural sweetness. For vegan you can definitely omit the honey and use another unrefined liquid sweetened of choice if you want such as coconut nectar.

If you are new to the world of celery juice, this blender recipe is a great place to start. You don’t need to go out and get a fancy juicer (unless you want to) and you can ease yourself into the flavour of celery juice with the addition of apple and lemon. Celery juice on it’s own can be really refreshing but definitely is more bitter and not sweet in the slightest.

Blender Vitamix Celery Juice

Yield: Makes approx 1 litre
Prep Time: 5 minutes
Total Time: 5 minutes

Ingredients

  • 3 cups organic celery pieces, washed well
  • 1 organic green apple, cored and washed well (skin on)
  • juice from 1/2 organic lemon + a few slices of organic lemon
  • 1 tablespoon raw honey
  • 2 cups cold filtered water

Instructions

  1. Add all ingredients to a blender and blend on high for 1 minute until no chunks remain.
  2. Line a pitcher or large bowl with a nut milk mesh bag and pour the celery juice through the bag into the container
  3. Cinch up the nut milk bag and squeeze out all remaining liquid until there is only pulp left in the bag and then discard the pulp.
  4. Add the celery juice to a glass jar or other container of choice to chill or enjoy some of the juice immediately.

Notes

Store celery juice in the fridge and consume within 48 hours.

  • I made ypur celery juice but d didn’t strain it. Is there a reason to strain the juice? I enjoyed the taste and texture.

    • Simply to get a thin, clear juice consistency. Some people prefer it unstrained but that’s more like juice with “pulp”! 🙂

  • Hi Christal. I make celery juice in my vitamix all of the time. I add an apple, lemon juice and some ginger.
    I also don’t strain mine, I just add ice and water and drink it right away, usually for breakfast.

    • Mmm ginger would be great! Yes, straining is totally optional! That way you get that extra fibre too!
