Hello my lovely NITK readers and Happy Sunday!

I am pretty excited for my post today because I finally got my butt in gear and put together a video for my YouTube channel! I have been wanting to get videos up on the blog for so long and it’s finally happening!

Today’s video is about two key thingsΒ I have learnt in the last 6 years as a Nutritionist and I’ve also got two challenges for YOU!

    I’ve been giving a lot of thought on diets, as I’ve been dealing with digestive issues for a while and now I’m in the FODMAPs elimination phase. I feel much better, but miss baking a lot!! Happily this is not a lifetime diet!!

    I’m just earned my Post Graduate Certificate of Nutrition and am just about to start my Masters of Nutrition. I still have a lot to learn. I am interested on your thoughts about stevia, erythritol and xylitol. I have a baking blog cakepossum.com where I try to make cakes that are ‘healthy’ and this always involves removing the sugar component and replacing it with one of these three sweeteners and also replacing porcessed wheat flour with whole grain, whole legume or whole nut flours. I also use coconut sugar occasionally, but not often. But I’m still not 100% convinced that I’m doing the right thing. I’d appreciate your thoughts.

    • Hi Terri! I honestly do not use erythritol and xylitol often because I have a sensitive digestive system and those sugar alcohols have not usually sat well with me. I do definitely aim to stay away from refined sugars so I will often use raw honey, pure maple syrup, or coconut palm sugar, and I also use stevia often! I know there are many different kinds of stevia on the market so I try to go with a stevia that does not have additives like maltodextrin, or those that are alcohol free as well! I agree with you on the flour replacements, I love to use nut flours and I’ll typically use a whole grain gluten free flour mixture or play around with other flours that are unrefined! I think you are doing great, at the end of the day when it comes to baking, you still do want to ensure the end result tastes edible haha, so it’s not that the baking is going to be like eating a bowl of vegetables, but if you are aiming to make it lower glycemic, and still have the bonus of nutrients from whole foods, I think you are on the right track! πŸ™‚

  • Way to go, Christal! Looking forward to seeing more videos from my favourite food blogger, aka NutritionistintheKitch. Loved what you had to say about no one way of eating being right for everyone. In October my Crossfit gym did a health challenge where we had to avoid grains, dairy, sugar and all processed foods AND we had to have 3 balanced meals a day and at least 2 litres of water and 7-8 hours of sleep. It wasn’t too big of a change for me with the food as I have been avoiding refined sugars for years (since I found your Eatmore Fudge Squares and realized I can have my cake and not eat sugar!) and I eat very little dairy or bread anyway. But I had been very busy in the months before the challenge and I had found myself reaching for sandwhiches with processed meat and cheese for their convenience. I was feeling tired and lethargic a lot of the time and my naturopath was trying all sorts of tests to find out what was wrong with me. Well it turns out that the problem was my diet even though I was eating quite healthy, or at least I thought I was. After being deliberate about having balanced meals and avoiding what Sherry Strong refers to as the lethal recipe of processed and GMO foods, I feel amazing and I lost 5 pounds that I have been dragging around for a while, without starving myself in any way. And best of all it’s sustainable. The challenge is officially over, but the 30 days was just what I needed to make some new habits. I’m shopping organic, usually with SPUD (what a time saver!). I prepare lots of food ahead of time so it’s always easy to throw a balanced meal together even when I don’t have time to make something fancy or even interesting! It’s amazing how enjoyable clean eating can be when the balance is there to really make me feel nourished. You continue to inspire me!

Yes it is so interesting to see how much the body can change and how you can feel when you find the “right fit” for what works with your body when it comes to your diet!
