Easy Mango Avocado Salad

A delicious mango avocado salad with walnuts, and a simple lemon honey dressing! Dairy free, gluten free, and healthy.

Ingredients

  • 2 large ripe mangos, peeled and diced
  • 1 ripe avocado, pitted and diced
  • 1/4 cup chopped or crushed walnuts
  • 1/4 cup red onion, diced
  • 1/4 cup chopped fresh mint
  • 1 tablespoon hemp seeds

Dressing

  • Juice from 1 whole lemon
  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons pure honey*
  • 1/8 tsp salt (or to taste)
  • 1/8 tsp pepper

Instructions

  1. To make the dressing, whisk together or blend the avocado oil or olive oil, lemon juice, honey, and salt and pepper.
  2. In a large bowl add the diced mango, diced avocado, walnuts, red onion, mint, and hemp seeds.
  3. Drizzle with the dressing and toss everything to combine.
  4. Divide between 2-3 plates.
  5. Optional: Serve with grilled chicken breast or baked salmon and goat cheese or dairy free feta cheese!
  6. Enjoy!

Notes

*For vegan use agave nectar in the place of honey.
