Open a container of blueberries and some may look deep blue and glossy while others carry a pale, dusty film. That coating can resemble residue left on the fruit, making washing or rubbing it off seem like the obvious next step.
The white layer is not flour, dirt, or a sign that the blueberries have been sitting around too long. Blueberries produce it themselves, and its presence can even reveal something about how much the fruit has been handled.
Known as bloom, the coating forms part of the blueberry’s natural protection. Keeping it intact until you are ready to eat the berries can also help during storage.
White Coating Is a Natural Wax
Bloom is an epicuticular wax found on the surface of blueberries. Under magnification, wax structures across the berry scatter light, creating the pale blue, silver, or white appearance we see.
The coating helps limit moisture loss and provides a barrier at the fruit’s surface. Rather than something added after harvest, it develops as part of the blueberry itself.
That explains why the coating can appear uneven. Some berries have a thick frosted appearance, while others look dark and polished.
More Bloom Can Mean Less Handling
Pick up a blueberry or rub its surface and some of the white coating comes away. Washing can remove it as well.
For that reason, blueberries with plenty of intact bloom may have experienced less handling since harvest. Berries that have been touched or rubbed more can lose parts of the coating and develop darker, shinier patches.
So that dusty appearance you might be tempted to avoid at the store is not necessarily a flaw. An intact coating can be a useful feature to look for.
Wait to Wash Blueberries
Blueberries still need to be rinsed before eating, but there is little benefit to washing the entire container as soon as you bring it home.
Water removes some of the natural bloom and introduces moisture during storage. Excess moisture also creates conditions that can speed deterioration.
Keep blueberries dry and refrigerated, then rinse the amount you plan to eat just before serving. Check the container when you bring it home and remove crushed or spoiled berries before putting the rest in the refrigerator.
White Dust and Mold Don’t Look the Same
Not every pale patch on a blueberry should be ignored. Natural bloom has a smooth, powdery or frosted appearance that follows the surface of the berry.
Mold looks different. Watch for fuzzy or raised growth, especially white, gray, or green patches. Soft texture, leaking juice, or an unpleasant smell can provide other signs that a berry has spoiled.
If one berry develops mold, remove it and inspect the fruit touching it rather than confusing the fuzzy growth with the normal pale coating found across healthy blueberries.
Other Fruits Have Bloom Too
Blueberries are not alone in producing a waxy surface layer. Grapes often have a pale haze, while plums can develop a striking silver-white coating.
Similar natural waxes occur on other fruits and vegetables, though their appearance varies. They should not be confused with commercial coatings that may be applied to some produce after harvest.
Blueberries make the effect easy to spot because the pale bloom contrasts with their dark skin. Next time a container looks unusually dusty, there is no need to polish every berry until it shines. That white coating was already there before the blueberries reached the store, and washing can wait until you are ready to eat them.
