Now that we are all spending a whole lot more time at home, I’ve been seeing tons of friends, family, and people in general on social media trying new things in their kitchen. From sourdough, to cakes, to kombucha, and all kinds of meals, people seem to be getting much more aquatinted with their kitchens. I’m definitely spending a ton of time in my newly renovated kitchen and excited to get “nesting” now that we are in our new place! Today I’m sharing a super simple easy to make-at-home blender or Vitamix Walnut Milk done two ways – vanilla and chocolate – for you to add to your must-make list!

Walnut milk, made directly from whole, raw walnuts, has these benefits as well and is incredibly easy to make to add into your daily eating be it at breakfast with granola or in a smoothie, a glass in the afternoon for a snack, an addition to homemade soups or curries, and added to baking as a dairy milk substitute!

To make your own walnut milk at home you only need a few ingredients. While you can make the vitamix walnut milk unsweetened, I like the addition of a touch of sweetness and vanilla flavour. Here’s what you’ll need:

  • Raw walnuts
  • Water
  • Salt
  • Vanilla extract
  • Pitted Dates

To make the uber delicious and also super simple chocolate version of the blender walnut milk you simply add cocoa powder! Here’s what you’ll need:

  • Raw walnuts
  • Water
  • Salt
  • Vanilla extract
  • Pitted Dates
  • Cocoa Powder

How To Make Blender or Vitamix Walnut Milk

 

To make the walnut milk you’ll need a high-speed blender or a Vitamix blender, a nut milk bag or cheesecloth bag (these are easy to find at most grocery stores or online on Amazon), and a jar or jug to hold your creamy, dreamy walnut milk. In just a few simple steps you’ll have a delicious non-dairy milk, loaded with nutrition that seriously tastes amazing on it’s own or in recipes. 

  1. Soak walnuts in bowl with water as this will help soften them for blending and make the nut milk even more digestible. 
  2. Drain and rinse walnuts under cold water in a strainer.
  3. Add soaked walnuts to a high-speed blender or Vitamix with other ingredients. 
  4. Blend on high for 1 minute until completely smooth. 
  5. Place nut milk bag or cheesecloth in a large container or jug and pour walnut milk through the strainer. 
  6. Squeeze all liquid out of the bag so only pulp remains (discard of pulp or save it for another use)
  7. Store walnut milk in the fridge and enjoy often!

How To Use and Store Walnut Milk 

 

Homemade walnut milk should be stored in the fridge for up to 4 days. It will settle as it sits in the fridge so when you are ready to use simply give it a good shake and add it to whatever your heart desires! Again, great ways to use walnut milk include:

  • With cereal, granola, oatmeal, porridge
  • In smoothies
  • On it’s own
  • In creamy soups, stews, or curries (omit vanilla and dates if using the walnut milk for savoury purposes)
  • In baking as a milk substitute

Ingredients

Vanilla Walnut Milk

  • 1 cup raw walnuts
  • 3 cups filtered water*
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 5-6 pitted dates or 2 tablespoons pure maple syrup

Chocolate Walnut Milk

  • 1 cup raw walnuts
  • 3 cups filtered water*
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 5-6 pitted dates or 2 tablespoons pure maple syrup
  • 1/4 cup cocoa powder

Instructions

  1. Soak walnuts in a bowl with water for a minimum of 5 hours or overnight.
  2. Drain soaked walnuts and rinse with cold water.
  3. Add walnuts to a blender with 3 cups water, vanilla, salt, and dates or pure maple syrup (plus cocoa powder if making the chocolate version). The Yummiest & The Easiest Vitamix Walnut Milk (2 Ways!)
  4. Blend on high for 1 minute (start at the lowest blending level and increase to high to prevent splashing) or until completely smooth and no large chunks of dates remain.
  5. Line a large container or jug with a nut milk bag or cheesecloth bag. The Easiest Vitamix Walnut Milk (2 Ways!) - in a few simple steps!
  6. Pour the milk from the vitamix through the bag to strain and squeeze the bag to remove all liquid so only pulp remains (this will take a few minutes, be patient :))
  7. Store walnut milk in the fridge or enjoy immediately!

Notes

*This is the amount of water you'll need to add to the blender with the soaked walnuts. Use additional water for soaking.
