Bread pudding usually starts with day-old bread, but I swapped it for pound cake and ended up with a dessert that sits somewhere between bread pudding, fruit cobbler, and cake.
Pound cake has enough structure to absorb the custard without turning to mush, but it brings something stale bread doesn’t: butter and sweetness are already built into every cube. Strawberry-rhubarb pie filling underneath adds tart fruit that cuts through the richer cake.
Vanilla glaze goes over the pudding after baking, so each serving gets warm custard-soaked cake, fruit filling, and glaze in the same spoonful.
Why Pound Cake Works in Bread Pudding
Day-old bread works because its dry structure absorbs the milk-and-egg custard without falling apart. Pound cake can handle the same job while changing the finished dessert.
For this recipe, use a frozen pound cake that has been thawed and cut into cubes. The pieces sit over strawberry-rhubarb pie filling before the custard goes on top.

Strawberry-Rhubarb Filling Goes Under the Cake

Vanilla glaze adds the final layer. Bring butter, sugar, and heavy cream to a boil in a saucepan, then remove it from the heat once the mixture starts to thicken.
Whisk in vanilla and let the glaze cool for a moment before pouring it over the bread pudding. It runs into the warm pound cake rather than sitting on top like frosting.
Serve the pudding warm on its own or add a scoop of vanilla ice cream.
