Turkey, Apple-Butter & Arugula Grilled Cheese (GF option!)

I recently stumbled upon this amazing, delicious, super simple, and super healthy product – Eden Organic Apple Butter.

“Heaven Butter” is reaaaally what it should be called – it’s delicious! It’s like a thicker, heartier, sweeter, version of applesauce, and it’s made from two ingredients Β – organic apples and organic apple juice concentrate!

After I dug into the jar with a spoon a few times, with each bite I was trying to imagine what I could add this delicious butter to, to take something kind of boring to the next level.

Well, when I think of butter, I think of two things “peanut” or “bread”. (and yes, I did take a spoonful of this apple butter and dip it into the peanut butter jar shortly after that thought – it’s pretty darn yummy!!)

So, bread,Β “okand how is bread really yummy??” … “as a sandwich… a grilled sandwich… with cheese! With apple butter in it! And on it!”Β 

Yes! Perfect – a grilled cheese sandwich with apple butter.

I then of course thought – where’s the protein, and decided that adding sliced turkey breast would go perfectly – as turkey tastes great with the addition of some sweetness (like turkey and cranberry!).

The arugula brings in a little bite to the savory and sweet flavors and just ties the whole sandwich together!

I used my favorite Silver Hills “Little Big Bread” to make my sandwich. I really love this bread because the slices are super thin, and I don’t like it when sandwiches are too “bready”Β  it’s all about what’s inside for me!

Two slices of Little Big Bread is only 110 calories and 19g of carbs, so with the addition of the turkey – the sandwich is quite balanced for macronutrients and doesn’t end up being a carb overload!

Another plus with this bread it that it’s made with sprouted grains and is all naturalno additives or junky ingredients!

I really can’t stand deli meat – it’s full of added sugar and sodium, preservatives, nitrates, and other not-so-great ingredients, which really defeats the purpose of clean, whole, natural proteins for me. Plus I always just imagine a bunch of meat sludge being packed into a tube or log, and yeah, well … just not very appetizing is it?!

So, instead I just took some boneless turkey breast and baked it in the oven, then sliced it thinly for my sandwich. I popped the leftover turkey in the fridge and used the rest for another meal!

In about 7 minutes flat my yummy sandwich was done – assembled, grilled, and ready to be devoured!

It took a lot of will power to get through these pictures without mowing down – I even considered taking pictures of just one half of the sandwich, but then I figured that wouldn’t look the best for picture quality!

The apple butter was PERFECT in combination with the hearty turkey, the savory melted cheddar, and the spicy arugula, sandwiched between two crispy slices of whole grain goodness!

I topped the grilled cheese with a little more apple butter, as my “ketchup” (we all know ketchup and grilled cheese is the ultimate combo), and it was probably I’d say one of the best sandwiches I’ve had in a long time!!

Our weekend camping was wonderful and I brought along my apple butter to use in a pie iron sandwich I made very similarily to this one – it was out of this world!

Serves: 1
Ingredients
  • 2 slices whole grain bread or Gluten Free bread (I use Silver Hills Little Big Bread)
  • 4 oz cooked turkey breast filet (I baked my turkey breast then thinly sliced it.. deli meat is full of additives, preservatives, and chemicals so I avoid it!)
  • 1 tablespoon apple butter (I use Eden organic, you can also make your own!)
  • ½ oz organic cheddar cheese or other cheese of choice
  • ¼ cup arugula
  • cooking spray or coconut oil
Instructions
  1. Heat a non stick pan over medium heat, and apply a small amount of cooking spray or coconut oil.
  2. Spread apple butter over the surface of each piece of bread, top one side with half of the sliced cheese, the turkey breast, the other half of the sliced cheese, then the arugula.
  3. Place the other piece of bread apple butter side down to make a sandwich, press firmly.
  4. Cook in the pan for 2 minutes on each side, or until browned and cheese is melted!
  5. Enjoy!
