What do you do when you have only 5 minutes to make lunch and have leftover chicken breast in the fridge??
You make Bell Pepper Boats stuffed with Avocado Chicken Salad! Or… Avo Chicken Salad Bell Pepper Boats!
I was rushing out the door the other day to get to work for my first client and I didn’t have time to make the usual lunch I’d put together (this seems like a trend as of late) so I grabbed what I saw, some avocado, chicken breast from the night before, a bell pepper, and sprouts! I figured something good would come out of it and when my lunch break rolled around I decided to mash the avocado with the chicken which I diced into little pieces and then scooped into segments of the bell pepper!
I used the sprouts as a little garnish and voila! I had lunch.
As I was munching away on the fresh, crisp, juicy, pepper filled with a creamy and rich avocado chicken filling, I thought – yeah, it’s simple, but I’ve got to share this one with the NITK readers!
I figure most of you who read the blog have typically the same tastes as me (hence, why you read the blog!) and you also, like me, love simple. Simple recipes that still burst with fresh flavours.
This is as simple as it gets but it’s still nutritious and delicious. Win and win.
Bell peppers are little antioxidant bombs. They are full of carotenoids, the lovely little organic pigments that give bell peppers their bright vibrant colours and at the same time help fight off cancer and promote healthy vision and cell growth. High five for bell peppers!
Avocado, another favourite of mine works perfectly to give the diced chicken a velvety, smooth, omega rich coating making it the perfect consistency to scoop right into the bell pepper “boats”. Who doesn’t love healthy omega fatty acids that boost brain health, skin health, and cardiovascular health?!
Finally, the little sprouts, though small, bring in enzymes, fibre, vitamins, and minerals. The perfect little addition!
Next time you’re at the store, pick up these few ingredients and when you have just 5 minutes, you know what to whip up!
- 4 oz cooked chicken breast
- ½ avocado
- salt pepper
- 1 bell pepper
- ½ cup sprouts
- Dice chicken into small pieces, or shred with a fork.
- Mash the avocado in a bowl and season with salt and pepper.
- Add the chicken to the bowl and mix and mash until well incorporated with the avocado.
- Cut the bell pepper into 3 segments and fill each segment with the avocado chicken filling.
- Top with sprouts and enjoy!

I tried this tonight but put my foundation as shredded cheese dampened w/ranch dressing. Then topped with chicken salad and fresh diced tomatoes on top. So easy and everyone loved it!
