  • Thumb of fresh ginger

How to Make Lemon, Garlic, & Herb Chicken Marinade

  1. Mince the garlic cloves into a medium-sized bowl. Add the olive oil, salt, black pepper, Italian herb mix, oregano, and lemon juice. Mix with a fork until well combined.
  2. Put the chicken thighs in the bowl and coat each thigh with the marinade. Cover the bowl with plastic wrap and chill in the fridge for at least 1 hour.
  3. Line a baking tray with oven paper and preheat the oven to 395 degrees F. Lay the chicken on the paper and cook for 30 minutes, turning the chicken thighs mid cooking.

How to Make Honey & Soy Sauce Marinade

  1. Grate the ginger and garlic cloves into a medium-sized bowl. Add the soy sauce, honey, and chili flakes. Mix well until the honey has dissolved a bit.
  2. Put the chicken thighs in the bowl and coat each thigh with the marinade. Cover the bowl with plastic wrap and chill in the fridge for at least 1 hour.

  • 8 chicken thighs

Marinade 1: Lemon, garlic, and herbs

  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian herbs
  • Juice of one lemon
  • 2 garlic cloves

Marinade 2: Honey and soy sauce

  • 1 cup soy sauce
  • ½ cup honey
  • 2 tablespoons chili flakes (or to taste)
  • 1 thumb of fresh ginger
  • 2 garlic cloves

Instructions

Prep the marinade 1: 

  • In a medium-sized bowl add the olive oil, salt, black pepper, Italian herbs mix, oregano, minced garlic, and lemon juice. Mix with a fork until well combined. 

Prep the marinade 2:

  • In a medium-sized bowl add the sauce, honey, and chili flakes, and grate the ginger and garlic cloves. Mix well until well combined and the honey has dissolved a bit. 
  1. Put the chicken in the desired marinade bowl and make sure each piece is well coated. Cover in plastic wrap and let sit in the fridge for at least 1 hour. 
  2. Prep a baking tray with oven paper and preheat the oven to 394 F. Lay the chicken on top and cook for 300 minutes turning the chicken thighs mid-cooking.

These two marinade sauces can be used with other parts of the chicken like breasts or wings. These two marinades are also very good for turkey. 

Once marinated the chicken can be made in the oven or in the air fryer, even in a pan with a lid. Leftovers can be stored in the fridge for up to 5 days in a sealed container. 

Alternatively, the chicken can be marinated in Ziplock bags and stored in the freezer with the marinade sauce for up to 3 months. Once ready to use let thaw in the fridge.
