Ingredients
1 scoop North Coast Naturals Chocolate Whey Isolate (or sub a vegan chocolate protein powder) (1 scoop = ¼ cup)
1 heaping tablespoon raw cocoa powder
3 tablespoons coconut oil, melted
5 drops liquid stevia OR 2 packets granulated stevia OR 1-2 tablespoons of raw honey OR 1-2 tablespoons other sweetener of choice
3 tablespoons unsweetened almond milk
2 tablespoons raisins
1 tablespoon raw pumpkin seeds
1 tablespoon dried goji berries
1 tablespoon walnut halves
1 tablespoon raw pistachios
Instructions
In a bowl combine protein powder and cocoa powder and mix.
Add in sweetener of choice, coconut oil (melted) and almond milk and stir until a pudding like consistency is achieved. (the mixture should be spreadable, not too thick – if it is too thick, add more almond milk)
On a large baking pan place a sheet of parchment paper, wax paper, or saran wrap.
Pour the chocolate mixture onto the paper/saran and spread into a thin layer.
Sprinkle the raisins, seeds, walnuts, goji berries, and pistachios over the chocolate and press down lightly to embed in the chocolate layer.
Place baking sheet in the freezer for 1 hour to set.
Once frozen, break or cut into chunks. (Keep stored in the freezer as this chocolate will soften pretty quickly at room temperature!)
