If you’ve been following Nutritionist in the Kitch for a while, you’ll already know I love my oats for breakfast. I’ve recently switched it up to Kinnikinnik gluten free bread, smothered in peanut butter and warmed berries, but I know eventually, I’ll go back to my trusty oats. I tend to eat the same thing for breakfast for months, then switch it up, and repeat!
My typical morning oats consists of oats, flax, cinnamon, and stevia, topped with berries…. so when I saw my best pal Brooke post about her CHOCO-banana oats I was very intrigued! I knew I had to test it out and throw a NITK spin on it!
Brooke of Brilliant By Brooke, is truly my an amazing friend. I’ve known her since I was 2 years old and she’s like a sister. One of those tried and true, always be there for you, pals!
She is also one of the most inspiring people I know – Brooke had always battled with her weight when we were growing up, her weight yo-yo’d up and down and she struggled a lot with her self-image.
One day, she just decided to make a change – she realized if she didn’t put the pedal to the metal, nothing would ever change – so… she went on to lose almost 50 lbs, run 2 half-marathons, compete in 2 fitness competitions, and become a certified Personal Fitness Trainer and follow her newfound passion in health!
I’ve been able to watch my best gal do ALL of this and she inspires me more and more each day!
Brooke is also, like me, always looking for great ways to change up the old and ordinary.. just like oatmeal! She thought of the idea to use chocolate almond milk (naturally sweetened with cane juice) to add some chocolaty deliciousness to the oatmeal, then throw in the ever so yummy flavours of banana and coconut!
In my version I decided to add some ground flaxseed for extra healthy fats and fiber and use unsweetened chocolate almond milk and stevia to add that sweetness instead!
This one hits it out of the park!
Flavourful, filling, and oh so good-for-you… I challenge you to try this one with the picky kiddies, they will be gobbling up their oats in NO-TIME!
- ⅓ cup instant oats (gluten free if needed)
- 1 tablespoon ground flaxseed
- ½ cup unsweetened (or regular) chocolate almond milk (Almond Breeze has an unsweetened variety, go with sweetened if you have more of a sweet tooth!)
- 1 packet stevia (optional, IF you go with unsweetened chocolate milk and want to watch added sugars!)
- 1 medium banana
- 2 tablespoons shredded unsweetened coconut
- Place the oats, ground flaxseed, and stevia (optional), in a bowl.
- In a small pot bring the almond milk to a boil.
- Once boiling, add the almond milk to the oat mixture and cover for 5 minutes.
- Slice the banana and stir into the oatmeal.
- Top with shredded coconut.
- Enjoy!

Hi Christal! I just recently found your blog this week and I’m really enjoying it! I love having hot oats for breakfast too. It’s my go to. A spoonful of almond butter on top is one of my favourite toppings. This looks so good. I’ll be trying it out for sure.
