Mediterranean Baked Feta

With this Mediterranean veg pasta bake, we combine oven-roasted veggies with some backed feta cheese to create a depth of caramelized flavor that cannot be beaten.

If you’re looking for some more tasty add-ins to include in this recipe then look no further because I have a mind-blowing list of options. For example, try adding in some of these:

  • Bocconcini cheese
  • Artichoke hearts
  • Italian parsley
  • Sundried tomatoes

Any of these could help to give more vibrant color, flavors, and depth to this tasty pasta dish.

While regular noodles aren’t usually a part of the Mediterranean diet you can choose whole-grain noodles or even plant-based ones to help make this dish a bit more nutritious.

This is a dish that needs no competition so keep the side dishes simple and easy by adding a side plate of breadsticks and salad.

How long is pasta bake good for?

you can keep your leftover pasta in an airtight container or in a well-covered baking dish using plastic wrap or foil. Keep it stored in the fridge for up to about 4 days. You can reheat it in the baking dish in the oven at 375 degrees F for 20 minutes or until warmed through.

Can I freeze feta pasta bake?

Yes, this pasta can be made and then have the leftovers stored in the freezer for up to 3 months. I recommend either freezing it in a disposable baking dish or in single-serving portions so that it’s easier to reheat later.
