So – I know I just posted a pumpkin recipe – However, I didn’t want to miss the chance to highlight some other fantastic must-try pumpkin recipes on my blog, AND a few others I’ve found out in the blogosphere that you also must try!
Why do I love pumpkin so much? Well, not only does it taste delicious in a sweet or savoury dish it’s uber healthy as it’s loaded with antioxidants! Pumpkin is also a great source of fibre and the seeds are a delicious snack, full of healthy omega fatty acids.
Oh, and you can also carve funny faces into pumpkins – which I love to do in October! One year I free-hand carved a wolf howling at the moon.. it was epic…until I pushed on the leg and it broke off, then I had a three-legged wolf howling at the moon. #fail

…check out these Pumpkin Pie Reese’s Peanut Butter Cups from Chocolate Covered Katie – seriously, who doesn’t already love the combo of PB & Chocolate?! Now throw some pumpkin into the mix?! Mind blown!
I’ve actually made these Healthy Pumpkin Chocolate Chip Oat Bars from Ambitious Kitchen a few times and they never disappoint – moist, sweet, healthy, and delicious, they are a big WIN.
These Pumpkin Cheesecake Parfaits look UNREAL – I can’t do actual yogurt, but I’d definitely give this recipe a try with a dairy free almond or coconut yogurt instead – wow.
