Recently I was asked to apply to become an Expert Among Us for She Knows! My application was accepted and I’m thrilled to begin posting over on She Knows every once in a while!
My first post for She Knows is for Valentine’s Day! I decided to go with an indulgent recipe that is surprisingly healthy! Since I’ve been using beets as inspiration for Valentine’s Day recipes this year – see Sunday’s smoothie post – I kept with beets to create these vegan and gluten free “Red Velvet” waffles smothered in a coconut whipped cream!

Usually I eat the beets either cooked and diced with a raw sauce made with olive oil, lemon, cumin and green oignons or in a carpaccio.
I’ve been meaning to try it in a dessert fro a while now, this is a good way to start!
