An Easy Marinated Vegetable Salad

There’s always room for a good salad when it comes to gatherings whether it be a birthday, bbq, baby shower, or holiday gathering and this marinated vegetable salad fits the bill.  It’s easy to make, loaded with flavour, crunchy, bright, and totally delicious.

I love making salads ahead of time that can sit in the fridge and soak in all the flavour without getting soggy and that’s what makes this recipe great for prepping in advance.

Another great way to enjoy this salad is in the summer at a picnic or going camping as you can make it a day or two in advance and it will last for a few more days chilled in the fridge. Like a fine wine, the flavours get better with age!

Making the Vegetable Salad Marinade

The marinade for this salad is very simple to make and you really just need a handful of ingredients and a jar to shake it all up in. Once you’ve mixed up the ingredients you pour this flavourful dressing over the mixed vegetables in the salad and let it sit for a few minutes (using the Foodsaver  quick marinator) or for a few hours in the fridge. Here’s what you’ll need for the dressing/marinade:

  • Olive oil
  • White wine vinegar
  • Red wine vinegar
  • Honey (or granulated sugar for vegan)
  • Lemon
  • Garlic
  • Greek herb mix
  • Capers

You can find a Greek Herb Mix at most grocery stores in the dry herb and spices section! The mix should have salt included, if it doesn’t, you’ll want to also add salt to the marinade separately.

Easy Marinated Vegetable Salad Preparation Options:

To make the salad you have a couple options. You can either marinate the salad using a Foodsaver with the Quick Marinator vacuum attachment, or you can add the salad ingredients to a bowl and pour in the marinade and allow it to sit and soak for one to several hours in the fridge. I like the Foodsaver as it makes for a quick way to marinate the salad and enjoy it within minutes.

It’s totally up to you and how much time you have to make the salad!

If I have the extra time or am planning to take the marinated vegetable salad to an event or gathering, I’ll prepare it a day or two in advance and just leave it in the fridge. But if I want to enjoy this salad that day and still want all the flavour, the Foodsaver Quick Marinator is the perfect option!

Vegetable Options for the Salad

When it comes to choosing vegetables for this easy marinated vegetable salad I go with a mix of firm and crunchy raw veggies and a few other vegetables that might have a little bit of a different texture. My ultimate combination is as follows:

  • Broccoli
  • Cauliflower
  • Bell pepper
  • Cherry tomatoes
  • Baby corn
  • Carrot
  • Celery

This is my personal favourite combination for the salad, but really…the sky’s the limit. You can use mushrooms, snap peas, cucumber, zucchini, onion and more! Whatever you choose, just be sure to stick with crunchy and hearty vegetables to make the bulk of the salad.

*I used cold veggies from the fridge to make the salad so it was already chilled when done marinating and ready to serve!
