Ingredients

Dressing 1 “Honey and balsamic vinegar”

  • ½ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • ¼ cup honey
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning: dried garlic, oregano, thyme, rosemary chili flakes, basil, black pepper)

Dressing 2 “Lemon and herbs infused olive oil”

  • ½ cup extra virgin olive oil
  • 1 lemon (the juice)
  • 1 garlic clove
  • 1 bunch of fresh chive
  • 1 bunch of fresh parsley
  • 1 teaspoon salt

Instructions

Seasoning 1: 

  1. In a crystal jar, add olive oil, honey, Italian seasoning herbs, salt, and balsamic vinegar. 
  2. Close the lid and shake well. Alternatively, you can mix it using a fork. 


Seasoning 2: 

  1. Juice the lemon and set aside.

  3. Chop as finely as possible the fresh herbs.

The two are ready to use as soon as they are made, but the second one is better if left 30 minutes to properly infuse the olive oil with the flavors. 

These two dressings are meal prep friendly and can be stored in the fridge in a closed container for up to 2 weeks for the first one, and one week for the second one. The second one has a shorter life due to the presence of fresh lemon juice and raw garlic, after one week in the fridge the flavors are not as fresh and are not nice, however, if kept in the fridge you can still use them for a bit longer.
