Ah, corn-on-the-cob.. good old, crunchy, juicy, makes-your-face-an-absolute-mess, corn-on-the-cob…

It is truly one of my favourite summer sides and I’m shocked I haven’t posted a recipe using this delicious vegetable on the blog yet (I guess I did talk about it in this post waaaay back when!) …Well, better late than never right?!

I had ordered a few cobs in my last SPUD delivery and was waiting for a nice, sunny, BBQ-must day to throw these bad boys on the grill! When the day had come, I was thinking of how I could up the flavour a little more by putting a spin on the simple, yummy, (local and organic!) cobs!

My hubby and I have been going a little crazy with the smoked paprika lately and I knew it would be a perfect addition to the corn along with some lime, garlic, and a recent discovery (which I’m totally loving) Soy-Free Earth Balance … a great butter substitution for those who can’t eat dairy! It’s a little salty, perfectly rich, and worked wonderfully on the smoky and limey cobs!

I used the spread recently in these delicious Cocoa Rice Crispy Squares and it was a great substitute for butter in the recipe!

The flavour combination of the Smoked Paprika & Lime is like a match made in heaven… think PB & J, Peas & Carrots, Spaghetti & Meatballs… you get my drift!

With a touch of immune-boosting garlic, and a sprinkling of sea salt, the smoked paprika and lime stand out even more!

Corn-on-the-cob when not completely slathered in butter is actually a fantastic, healthy side to any Summer supper. It’s high in fibre, B vitamins, and a ton of antioxidant phytonutrients (and… I’m just going to go out and say it – I do recommend local, organic, non-GMO corn whenever possible!).

It’s also a ton of fun to eat!

I always think of Homer Simpson whenever I’m eating Corn-On-The-Cob… ha! What a guy! (If you were a Simpsons fan growing up you’ll get this. I was, big time.)

Smoky Lime Grilled Corn-On-The-Cob

Serves: 2
Ingredients
  • 2 ears of corn
  • 1 tsp earth balance soy free spread OR organic butter OR you could try coconut oil too!
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 1 tsp fresh lime juice
  • 1 tsp fresh lime zest
  • ¼ tsp sea salt
Instructions
  1. Baste the corn cobs with the earth balance spread (or whatever you decide to use).
  2. Squeeze a little bit of lime juice over each cob.
  3. Sprinkle evenly with the paprika, garlic powder, and sea salt.
  4. Wrap each cob in tin foil and place on the BBQ for 10-15 minutes.
  5. Remove the cobs from the tinfoil and place directly on the grill, turning, for about a minute just to char the corn slightly.
  6. Put corn on a plate and sprinkle with the lime zest.
  7. Enjoy!
