I’m going out on a limb today with my statement that these are the best healthy homemade oven-baked french fries but…they are. They are super crispy, so very tasty, and still healthy! Baked fries can be tough to make taste as good as deep-fried fries with the same crispy, delicious texture, but these ones hit it out of the park. The trick is in the way they are baked in the oven with parchment paper and the perfect homemade herb and garlic seasoning blend. 

I’ll admit, I’m a big french fries fan. At restaurants I often opt to make the healthier choice and go for a salad  but every now and then I splurge and go for the fries, or I just force Justin to get the fries and eat half of his fries with my salad – balance right? 

When it comes to enjoying french fries at home I use this easy-peasy baking method to make the garlic herb french fries that totally measure up to the deliciousness of any restaurant fry out there.

 

How To Get Baked French Fries Crispy

 

The keys to getting the perfect amount of crisp on these delicious baked fries is parchment paper, cooking methods, and olive oil.  The wonderful thing about parchment is that you can get away with using minimal olive oil and the fries will still bake up nice and crispy without sticking to the pan and burning. 

Along with using the parchment paper I’ve discovered the perfect timing method to make these baked fries fully cooked through while getting a nice crisp and no burning. The oven must be set at a perfect 400 degree temperature then you bake the fries (with none overlapping on the pan) for 20 minutes on one side, then another 12 minutes on the other side, then… the kicker to seal the deal… 2 quick minutes on broil. 

When these crispy oven-baked little are cooked to perfection, they come out of the oven and get a quick toss final toss in the remaining herb and garlic spice mixture. I like to toss the raw fries in some olive oil, garlic, spices, and herbs first but save half of the mixture for when the fries are finished so they lightly coat the baked fries just like restaurant seasoning (but not because there’s no weird ingredients in my homemade herb and garlic spice mix).

These fries have a great flavour because of the mixture of garlic, spices and herbs. Here’s what you’ll need: 

  • Dried thyme
  • Dried rosemary
  • Salt
  • Pepper
  • Fresh garlic
  • Garlic powder
  • Onion powder
  • Fresh parsley
  • Fresh chives 

The combo of herbs and seasonings take these perfect healthy homemade oven-baked french fries to the next level of deliciousness. I’d trade in the deep-fried version for these any day!

To amp these baked fries up another notch I made a really quick aioli dip using real mayonnaise mixed with fresh chopped parsley. That’s it! A simple and totally optional dip for these mega delicious french fries.  

Nutritional Benefits of Potatoes

 

I think potatoes often get a bad rep as many people think potatoes are too starchy or are a “bad carb” but I want to change that view if you hold it. Yes, if you throw potatoes in a deep fryer or mash them with a bunch of cream and butter then no, they might not be the healthier, but potatoes in their natural state are actually a nutrient powerhouse!

One medium potato provides 15% of the daily recommended intake (DRI) of fibre, over 30% of the DRI of Vitamin B6, over 20% of the DRI of Vitamin C and Potassium, and ample amounts of iron, magnesium, and other B vitamins! Because potatoes are higher on the glycemic index they can raise blood sugar levels, but pairing them with some healthy fats like olive oil or lean protein is a great way to slow the release of their natural sugars. 

In my book, potatoes are a win, and these Healthy Homemade Oven-Baked French Fries…well, they are a victory!

Crispy oven baked French fries with fresh herbs and garlic seasoning

Healthy Homemade Oven-Baked French Fries

Yield: Makes 4-5 Servings
Prep Time: 5 minutes
Cook Time: 35 minutes
Total Time: 40 minutes

These delicious and healthy homemade oven-baked french fries are perfectly crispy, dairy free, gluten free, vegan, and loaded with flavour. 

Ingredients

  • 4 medium russet potatoes, washed and sliced into 1/2" fry strips
  • 1 tablespoon olive oil
  • 1 garlic clove, minced

Seasoning Mix

  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary

You Will Also Need

  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh chives
  • Parchment paper

Instructions

    1. Preheat the oven to 400 degrees.
    2. Wash and cut the potatoes.
    3. Add the sliced potatoes to a large bowl and drizzle with olive oil and add in the fresh minced garlic, tossing to lightly coat.
    4. In a small bowl combine the spices for the seasoning mix and add 1/2 of the seasoning mix to the bowl with the potatoes. Toss again to coat the potatoes. Set the remaining seasoning mix to the side.
    5. Line a baking sheet with parchment paper and add the potato slices to the pan, cut side down, so they are all evenly dispersed, none overlapping.
    6. Bake for 20 minutes. After the 20 minutes is up, remove the pan from the oven and flip all of the fries so the crispy side is up.
    7. Place back in the oven for 12 more minutes.
    8. Remove from the oven and toss the fries on the pan so none are sticking.
    9. Turn the heat up broil (500 degrees) and place the fries back in the oven for 2-3 minutes until perfectly browned and crispy.
    10. Remove once again and toss the hot fries in a large bowl with the remaining seasoning mix to coat completely.
    11. Enjoy alone or with any healthier dip of your choice (I made a quick aioli using 1/4 cup real mayonnaise mixed with 2 tablespoons finely chopped fresh parlsey).
