I’ve been all about coconut lately! Coconut milk, coconut chips, coconut oil, and shredded coconut have all been going to good use in the kitch! So, this past weekend, when the hubby and I decided to whip up some yummy drinks to enjoy on our patio, I went straight to the coconut!
When we were in Hawaii this past February, we went to an awesome restaurant that served these cocktails called “Lime In Da Coconut”. They were SO good that we literally went back two more times so that I could have one… or three. The cocktail was simple – pineapple, coconut, lime, and vodka, but the flavours worked so well together, especially in that hot, humid, Hawaii weather!
Remembering this amazing cocktail gave me the idea to make this Toasted Coconut & Lime Cream Soda drink, along with the inspiration from the amazing Sherrie of With Food & Love who made these amazing cream sodas not too long ago!
I decided to marry the two ideas and use soda water with coconut milk, lime, simple syrup made with stevia and a generous topping of toasted coconut chips (thank you Hippie Foods!).
Because it was the weekend, I decided to add in a little vodka, but this cream soda drink would be just fine without the alcohol as a tasty, refreshing, summer mocktail suitable for everyone!
The fizziness combined with the creamy, sweet, and tangy mix of lime and coconut was perfection! Each sip brought me back into Hawaii Dreamland as I enjoyed this soda on our patio.
Another bonus about this drink? It’s actually healthy (well, maybe vodka aside, but everything in moderation right!). There are no artificial ingredients, refined sugars, or dye-number-xyz‘s!

- ½ cup ice
- ½ cup light coconut milk
- juice from one whole lime
- 1 oz stevia simple syrup OR 1 tablespoon raw honey
- 2 oz vodka (or rum) or OMIT for non-alcoholic version
- 1½ cups soda water
- 2 tablespoons (or more) toasted coconut chips or flakes
- lime zest to garnish
- In a cocktail/martini shaker add ice, coconut milk, lime juice, and stevia or honey.
- Shake well.
- Divide between two cocktail glasses and add in more ice if desired.
- Pour in the soda water to fill each glass,
- Top each drink with the toasted coconut and lime zest.
- Enjoy!
