Unreal Healthy Buffalo Cauliflower Tacos!
First things first. Today is my daughter Hemsley’s 3rd birthday (!!) so I must wish her a very Happy Birthday my little nugget (not that she’ll ever read the blog, ha, but I need to make the public announcement because I LOVE YOU my little squish!!).
If you are a regular NITK reader you’ll see I’ve been sharing a lot more plant-based recipes and roundups as I’ve been transitioning over the past couple of years to a more plant focused diet. While I still enjoy animal products, primarily eggs and lean proteins, I’ve been enjoying bringing more plants into my meals as the “centrepiece” rather than just the sides!
These healthy buffalo cauliflower tacos are a great way to try a plant-based meal that can sub in for your typical “Taco Tuesday”!
Tacos are also such a great go-to recipe when you don’t have a lot of time or a lot of ingredients available at home. You can keep it simple with fillings or get creative and go-to-town on the toppings and sauces.
As a family we do a taco night every week or other week and I love mixing it up with ingredients. These buffalo cauliflower tacos were a big hit especially with my hubby who likes a little heat in his food. Speaking of heat, let’s talk about the “buffalo” sauce in these tacos.
What is “Buffalo” Cauliflower?
To make anything “buffalo” flavour you have use a buffalo sauce which is similar to a typical hot sauce with a couple differences. Buffalo chicken wings are the most common type of food you’ll hear as buffalo flavour, but really you can make any meat or vegetable “buffalo”.
Buffalo cauliflower is essentially cauliflower chunks that are roasted, or baked (and sometimes breaded or fried for the less healthy version) and then tossed and coated with a delicious buffalo sauce that adds heat and a vinegary flavour.
Ingredients in Vegan Buffalo Sauce
A traditional buffalo sauce usually combines cayenne pepper with vinegar and butter. To make a super easy vegan buffalo sauce for these cauliflower tacos you only need two simple ingredients and it does the trick!
- Frank’s Red hot sauce
- Vegan butter (I used Earth Balance Brand)
It sounds like a simple combination but the hot sauce brings in the cayenne and vinegar and then the vegan butter adds the perfect richness that makes the sauce velvety and stick nicely to the roasted cauliflower.
Ingredients for Healthy Buffalo Cauliflower Tacos
To make the cauliflower tacos come together you need a small handful of common ingredients which makes these tacos convenient and easy to make. If there’s a particular topping you don’t like simply swap it out for something else you’d prefer.
- Corn tortilla shells
- Red cabbage
- Buffalo cauliflower (cauliflower + buffalo sauce)
- Cherry tomatoes
- Avocado
- Cilantro
- Hemp seeds
- Lime
- Cashew cream or vegan ranch dressing (optional, to drizzle!)
For the topping I made a simple homemade cashew cream sauce using cashews, water, lemon, and salt in my Vitamix. Here is an easy tutorial for a homemade cashew cream from Loving It Vegan if you prefer that over a vegan ranch dressing.
When it comes to the cauliflower, I kept it simple by just roasting the cauliflower in the oven with some olive oil and half of the buffalo sauce. After it was roasted with crispy browned edges I tossed the roasted cauliflower in the remaining buffalo sauce. Easy peasy!
These tacos are incredibly filling, full of plant-based goodness, have no gluten or dairy for those with sensitivities, and are made with minimal ingredients. With the weather getting warmer and sunshine-filled days happening, it’s a great time to get on the taco train.

Healthy Buffalo Cauliflower Tacos (Vegan!)
These unreal healthy buffalo cauliflower tacos are vegan, gluten free, easy to make, perfectly flavoured, and so fun for a plant-based taco alternative!
Ingredients
Buffalo Sauce
- 3 tablespoons Frank's Red hot sauce
- 3 tablespoons vegan butter (Earth Balance brand is great!)
Cauliflower Buffalo Tacos
- 6 corn tortilla shells
- 1 large head of cauliflower, cut into florets
- 1 tablespoon olive oil
- 1 cup shredded red cabbage
- 1 cup cherry tomatoes, halved
- 1 avocado, pitted and sliced
- 1/4 cup cilantro, chopped
- 1 tablespoon hemp seeds
- 1/4 cup cashew cream* or vegan ranch dressing (Daiya brand is a good option)
- 1 lime, cut into wedges
Instructions
- Preare the cashew cream ahead of time if using.
- Preheat the oven to 400 degrees.
- In a small saucepan melt the vegan butter and transfer to a bowl.
- Add the hot sauce to the bowl with the melted butter and stir until combined.
- Line a baking pan with parchment paper. In a large bowl toss the cauliflower florets with the olive oil and half of the buffalo sauce. Toss to coat.
- Spread the cauliflower florets over the baking pan and roast in the oven for 20 mintues or until fork tender and browned on the edges.
- Once the cauliflower is roasted, remove from the oven and toss again in a bowl with the remaining buffalo sauce.
- Assemble the tacos by heating or toasting 6 corn tortilla shells, then layer with the shredded cabbage, buffalo cauliflower, cherry tomatoes, sliced avocado, and cilantro.
- Sprinkle each taco with hemp seeds, a squeeze of lime, and a drizzle of the cashew cream or vegan ranch dressing.
