Ingredients

  • 2 cups cooked quinoa
  • 1/2 white onion 
  • 1 carrot
  • ½ diced purple cabbage
  • 3 eggs
  • 1 ½ cups garlic and parsley breadcrumbs
  • 1 tablespoon salt
  • 1 tablespoon dried oregano
  • 1 tablespoon black pepper
  • 2 tablespoons olive oil + more for cooking
  • 1 garlic clove

To serve them (optional)

  • Burger buns

Instructions

  1. Prep the veggies: grate the carrot, dice finely the onion, and the cabbage. Mince the garlic (as finely as possible)

  3. Add the cooked quinoa and all the prepped veggies into the bowl. Also, add the olive oil to the mix. Mix well. 
  4. Form the burger patties and set them aside on a plate. 
  5. In a pan add a bit of olive oil and cook the patties on medium-high for 2-3 minutes on each side. 
  6. Serve inside a burger bun with cheese, lettuce, tomato, onion slices, and the sauce of your choice. 

Notes

These quinoa burgers can be done in advance and frozen for later use. Also they can be stored in the fridge for up to 2 days (raw) or 5 (cooked) 

You can switch the veggies and add zucchini, bell pepper, spinach… 

They are consistent but moist, very filling, and super satisfying.
