It’s time for another Wellness Wednesday post. I am super happy to see that so many of you are loving these bi-weekly recipe roundup posts. A couple weeks ago I shared 10 healthy overnight oats recipes to try and it has been getting tons of love from Pinterest and on Instagram. Today I am sharing 10 more recipes from the and NITK archives and the blogosphere. Here are 10 easy and healthy crockpot recipes to make a meal prep a breeze! Even though I am currently spending my first wonderful and glorious day in Maui (finally!), I know that back at home and around the globe many of you are dealing with the cold winter weather, so this post is the perfect warm and cozy pick-me-up! These crockpot recipes are all gluten free and can easily be made dairy free if they aren’t already. They are tasty, simple to make, filling, warm, and delicious. Get the crockpot or slow cooker fired up to make at least one of these delicious recipes!
These delicious and perfectly simple beef tacos are made with slow cooked chuck roast, served in warm corn tortillas and topped with onions, cilantro, and radishes. The slow cooked beef freezes well making it a great meal prep option!
This delicious dairy free slow cooker butter chicken from the blog archives is one of my favourite and most popular recipe. It’s filling, rich, creamy, and perfect for whenever you have a hankering for Indian inspired food. This recipe also makes six servings so you can prep for the week ahead!
Tortilla soup is one of my favourites and this recipe from Half Baked Harvest does not disappoint! Not only is it a beautiful dish, it’s super simple to make in the crockpot and can be garnished with all of your favourite tortilla soup toppings. The recipe also serves six making it another great meal prep recipe.
This lovely and simple crockpot chilli has dozens of five star reviews and is the winner of multiple chilli cook off’s… enough said!! The recipe makes 10 to 12 large servings so you can stock your freezer with chilli to last you through the winter!
This Thai green curry made in the slow cooker has a ton of veggies and chickpeas as well as tender chicken, making it filling, delicious and the perfect comfort food dish. There’s also a vegetarian option if you want to skip the meat and the recipe serves 6 so it’s a great batch meal.
Another chili recipe on the list! This one is made with white chicken, cannellini beans, corn, celery, onion, and lots of spices. It’s simple but filling and perfect for a cold winter day. The recipe yields 6 to 8 servings.
Another recipe from the NITK archives, this easy paella is filled with all kinds of seafood and natural chorizo sausage as well as a delicious broth for a lighter, but still warming slow cooker meal.
This vegetarian posole is made with Lightlife plant-based chorizo, diced tomatoes, lots of garlic, pinto beans, and hominy (you could swap this for regular corn!)… it’s full of flavour, makes a great batch meal as it serves six, and is just plain beautiful!
When all you want is all the veggies this slow cooker vegetable bean soup is a definite must! It’s loaded with beans, carrots, celery, onion, and herbs and just says comfort-in-a-bowl! The recipe makes 6 to 8 servings so again another great meal prep option.
For the last recipe it’s another chilli, this one from the lovely Beth of Tasty Yummies. This quinoa chilli is both gluten-free and vegan, filled with veggies, beans, and spices… and has a hint of dark chocolate. Yum!
