Hi all! This post is going to be short and sweet today as I’m busy packing for San Francisco as we jet off tomorrow. I’m excited and a little nervous (ok, maybe a little more than a little…), as I’m going to be heading to Brit + Co headquarters to take part in an exciting project. I wanted to revamp this smoothie in honour of Valentine’s Day coming up this week as it’s one of my old favourites that has sadly disappeared into the archives of NITK, so I’m bringing it back to life.
Beets are amazing. They help to naturally detoxify the liver, offer an ample dose of vitamins, minerals, and antioxidants and work wonders for the digestive system. As a Ukrainian gal I’d like to say beet juice runs in my veins!
In this smoothie I combined beautiful beets with with raspberries, strawberries, banana, avocado, chia seeds, collagen protein, honey, and a healthy splash of almond milk. That’s a whole lot of healthy, nourishing, whole food ingredients. And, because this is a Valentine’s inspired smoothie I topped it with dark chocolate chips and some toasted coconut for a little flair! Besides, chocolate brings in even more antioxidants…right?
Valentine’s Day doesn’t have to be a dreaded junk-food trap. Blend up my Sweet Beet Smoothie to serve to your sweetie(s), big and small, and share the love this week!Â
- ½ small raw beet, diced
- 1 cup frozen raspberries
- 1 cup frozen strawberries
- 1 small banana
- ½ avocado
- 2 cups unsweetened almond milk
- 1 tablespoon raw honey
- 4 scoops collagen peptides (optional)
- 2 tablespoons dark chocolate chips or chopped dark chocolate
- 2 tablespoons unsweetened shredded coconut, toasted
- Blend the beet, berries, banana, avocado, honey, collagen, and almond milk until smooth. Divide between two glasses and garnish with the chocolate and coconut.
- Enjoy!

Absolutely! I would have it for breakfast with a protein source on the side like a couple free-range eggs or plain Greek yogurt! 🙂

This looks wonderful! I love the color, and adding beets to a smoothie is one of my favorite tricks! I always add roasted beets for a little touch of sweetness (in fact, I just posted a recipe with one on Friday!), but I’ve never gone and added a raw one to a smoothie. I’ll definitely have to give it a try1
