Easy Plant Based Desserts for…Tough Days
Oy, my friends, what a time we are in. I can honestly say in the last week everything has hit me like a bag of bricks. I think I’ve been in this weird denial mode that we are actually experiencing a world pandemic for the last month and now I’ve finally accepted that this “new normal” is going to be around for a while. I’ve been experiencing all sorts of emotions – angry, annoyed, sad, anxious, ambivalent – but I’ve also been trying to just accept that what is – is, and that everything is out of my control except for my attitude and perspective. It’s weird to feel like your freedom is slowly being stripped away and I guess that too puts things into perspective for me about how thankful I am to live where I do and live the life I do. Now that I’ve spent the last month at home with Hemsley everyday (we have no childcare currently), waddling around in my third trimester of pregnancy, finishing a home renovation, and trying to figure out how the heck to keep my blog afloat, I’ve had to accept that I’m not superhuman (damn!) and will likely need to step back from work somewhat in the coming months. While many are viewing or experiencing this season as a time to “seize the day” and seize the opportunities that come with more free time or time at home, I definitely feel like I’m just trying to get through each day with a decent amount of energy and sanity. So that’s where I am. How are you doing?

See, and just like that I’m in a better mood, ha, but really – these gorgeous plant based desserts definitely inspire me to turn my frown upside down and make lemonade out of this not-so-stellar situation we are all in. In all seriousness I hope you are all doing well, managing through this challenging time, and finding peace in knowing that this too shall pass. I’ve found that daily time in prayer, gratitude, naps (hello pregnancy!) and lots of deep breaths are really helping me out these days as well as connecting with friends and family virtually. It’s wonderful that we live in a time where we have easy access to our loved ones over social media and video calling as I believe that coming together in community (while still physical distancing) is surely the way we are going to get through this.

Yes, I hear ya. I was just doing fine until last weekend after a cousin of mine (with health issues) died after having covid. That likely was what started a few days of feeling quite down. Doing better now though and am going to experience a birthday this week in isolation….so we’ll see what that brings! 😉
